Saxum Vineyards
SAXUM is Latin for large stone, which the vineyards of West Paso Robles have in abundance. Founded by Justin and Heather Smith, SAXUM focuses exclusively on Syrah from the windswept hills of West Paso Robles. Justin's philosophy is to let the fruit speak for itself. Yields were about 2 tons per acre and the fruit was harvested only when maturity was ideal. As for the winemaking: no crushing, no acidification, no fining, no filtering, minimal sulfites, minimal racking. Robert Parker gave the '03 Bone Rock Syrah a glowing review and a 95 point score. With only 350 cases made SAXUM has already achieved huge acclaim and a tremendous following. Congratulations Justin & Heather!
